It's not a "throwaway gateway", it's one of the most extraordinary historical cities in Europe, and 2 nights there will deepen your Santorini visit because you'll come to the islands having seen the Bronze Age frescoes that match what you'll see in the Akrotiri archaeological site on Santorini.

Conversely, don't try to do all of Greece in 7 days. Athens + Santorini + a third island (Mykonos or Naxos) compresses the whole trip and turns it into a transit checklist. If you've only 7 days, stick to two destinations.

Our recommendation: take a morning flight on Day 4 (depart Athens 09:00–11:00), arrive Santorini by midday, settle into your hotel by 14:00, sunset that same evening. You don't lose a Santorini day to transit.
